These macarons were inspired by my favorite “I just need a little chocolate” treat. Trader Joes dark chocolate almonds with turbinado sugar and sea salt. If you haven’t tried them, you need to! For the patisserie version of these treats, chocolate macaron shells are dip in dark chocolate and sprinkled with turbinado sugar and flaked sea salt. Then, filled with dark chocolate almond ganache and sliced almond pieces.
I have very exciting news! b. sweet will be partnering with Palate Bottle Shop and Reserve and Jeff Gordon Chevrolet on October 4th for A Night to Remember - dessert and wine pairing benefiting Alzheimer’s Research. I will be creating 4 mini desserts to pair with 4 wonderful dessert wines from Palate and all to support the fundraising efforts of Jeff Gordon Chevrolet for the Walk to Cure Alzheimer’s. Sweets, wine, and a good cause, what else do you need?
These macarons combine fall spices and summer stone fruit. Fresh plums are roasted with brown sugar, cinnamon, clove and star anise to warm up and deepen their sweet flavor. Then, they are mixed into Swiss meringue buttercream before being sandwiched between two fresh macaron shells. A taste of summer with the spice of upcoming fall.
